Which is better among both for use in server environment and having large apt cache and better hardware support / software support and security pdates.
My another question: is it possible and better to use yum also on both.

i'd go with ubuntu. it has more frequent releases (every six months), a large commercial presence behind it (for support), and uses the same package management system as debian. ubuntu puts out a release every two years or so that has long term support (good for businesses) -- install it, and you'll get updates for up to five years. normal releases get updates for 18 months.
yum is actually a copy of debian/ubuntu's package management tool, but maybe not so full-featured.
